The candidate must have a minimum of 3 years experience as a Pantry Person at a 4 star Hotel or Restaurant. Assists Garde Manger with cold food preparation . Set up work station with required mis en place, tools, equipment and supplies. Inspect the cleanliness and working condition of all tools, equipment and supplies. Check production schedule and pars. Establish priority items for the day. Transport supplies from the Storeroom and stock in designated areas. Select, clean and prepare fruits and vegetables. Produce salads, fruit, vegetable,cheese,meat trays and centerpieces for Banquets and Buffets. Display items attractively and to specified requirements. Prepare amenity orders for Room Service. Prepare and produce cold menu items for designated F&B outlets. Prepare all dishes following recipes and yield guides.
Sets up selected dressings, ingredients for salads, cold soups and sandwiches in certain applications set up ingredients for desserts. Able to prepare various types of dressings, vinaigrettes, cold food garnishes and decorations. Responsible to set up entrée salads, sandwiches, some hot and cold combination entrees and cold appetizers. Minimize waste and maintain controls to attain forecasted food cost Ability to exert physical effort to transport up to 50 pounds. Ability to endure various physical movements throughout the work areas.
Ability to reach 5 feet. Maintain a stationary position for up to 6 hours throughout work shift |
