EXECUTIVE SOUS CHEF

Notes Minimum of 3 years experience in a similar position at a 4 star style hotel or restaurant.
Strong knowledge in food cost controls, planning and developing menus, recipes minimizing food waste and maintain controls to attain forecasted food & labor costs. Assist to foster And promote a cooperative working climate, maximizing productivity and employee morale. Conduct scheduled performance appraisals, provide feedback to staff on their performance, handle disciplinary problems and counsel employees according to hotel standards. Assist with scheduling and payroll issues. This position requires working on the line wherever needed. Must be able to instruct staff on safety, sanitation & grooming requirements as outlined by Federal, State, County and hotel standards. Must be able to work flexible schedules including weekends and holidays.
